I had a wild kitchen inspiration moment the other day - the one that you say I-will-either-devour-or-throw-away-my-food kind of inspiration. Sounds familiar? Well, it so happened that some canned food was in the fridge for about 5 days and I wanted to use it before it was too late. Don't imagine canned beans though! It was canned beets and canned roasted red peppers. I am pretty sure that this recipe will be even better with fresh beets (boiled of course) and homemade roasted red peppers. In any case, here's the result:
